Instructions

  1. Slice the zucchini: Slice the zucchini into thin ribbons approximately 1/8 inch thick. Bend a slice to check that it’s thin enough to easily bend without breaking.
  2. Preheat grill: Heat your grill to high, aiming for a temperature around 450°-500° Fahrenheit.
  3. Season the zucchini: Lay the sliced zucchini out on a baking sheet. Lightly brush both sides with olive oil, then sprinkle each side evenly with tajín seasoning.
  4. Skewer the ribbons: Carefully weave or fold the zucchini slices onto skewers to form ribbons for grilling, ensuring they are secure.
  5. Grill the skewers: Place the zucchini skewers on the preheated grill. Grill for about 10 minutes total, turning 2 to 3 times to ensure each side gets nice charred bits and caramelization.

Notes

  • Use a mandoline slicer for uniformly thin zucchini ribbons if available.
  • If you don’t have tajín, a mixture of chili powder, lime zest, and salt can be a good homemade substitute.
  • Brush the zucchini gently with olive oil to avoid breaking the ribbons.
