- 2 Tbsps pure maple syrup
- pinch of ground cinnamon
- ginger beer, for topping

Instructions
- Prepare the Spiced Pear Citrus Base: In a saucepan, heat the extra virgin olive oil over medium heat. Add the sliced pears and orange with their skin on, sautéing gently for a few minutes until slightly softened.
- Add Sweeteners and Spices: Stir in the pure maple syrup, ground cinnamon, nutmeg, and allspice. Cook for a few minutes to blend the flavors and allow the spices to toast slightly.
- Simmer the Mixture: Pour in 2 cups of filtered water and bring the mixture to a gentle simmer. Let it cook for 15-20 minutes until the fruit is tender and the flavors have infused the liquid.
- Strain and Cool: Remove from heat and strain the spiced fruit liquid through a fine mesh sieve into a container. Let it cool to room temperature.
- Mix the Mocktail: In a pitcher or individual glasses, combine the freshly squeezed orange juice, 2 tablespoons of pure maple syrup, and a pinch of ground cinnamon. Add the cooled spiced pear citrus base and stir well.
- Serve with Ginger Beer: Pour the mocktail into glasses, topping each with ginger beer to add fizz. Garnish with rosemary sprigs if desired.
