Ingredients
Scale
Cookie Dough
- 1 cup cottage cheese
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- 3/4 cup almond flour
- 1 1/2 scoops vanilla protein powder
- 2 tbsp mini dark chocolate chips
Chocolate Coating
- 1 cup dark chocolate chips
- 1 tsp coconut oil
Instructions
- Blend Ingredients: In a food processor or blender, combine the cottage cheese, maple syrup, and vanilla extract. Blend until smooth and creamy.
- Mix Dough: Transfer the blended cottage cheese mixture to a medium bowl. Add the almond flour and vanilla protein powder. Mix until combined to form a thick cookie dough texture.
- Add Chocolate Chips: Gently fold in the mini dark chocolate chips evenly throughout the dough.
- Freeze Dough: Portion the dough into mini muffin liners placed in a mini muffin pan. Freeze for about 1 hour to firm up.
- Melt Chocolate: In a microwave-safe bowl, melt the dark chocolate chips and coconut oil in 30-second intervals, stirring between until smooth and fully melted.
- Coat Bites: Using a fork, dip each chilled cookie dough bite into the melted chocolate, coating fully. Place coated bites on a lined baking sheet. Optionally sprinkle flaky sea salt on top.
- Set Chocolate: Return the coated bites to the freezer for 15-20 minutes to allow the chocolate to harden completely.
- Serve: Enjoy these protein-packed, chocolate covered cookie dough bites as a nutritious and indulgent treat.
Notes
- Ensure the dough is firm enough before dipping to avoid spreading or melting chocolate.
- Use mini muffin liners to keep the bites uniform and easy to portion.
- Flaky sea salt on top adds a nice contrast to the sweetness but is optional.
- Store leftovers in an airtight container in the freezer to maintain texture and freshness.
- Substitute maple syrup with honey or agave syrup if preferred.
