Instructions

  1. Cook the onion and chicken: Heat the olive oil in a large oven-proof skillet over medium heat. Add the chopped onion and cubed chicken. Cook for about 5 minutes until the chicken is no longer pink and starts to brown slightly. Season with salt and pepper to taste. Stir in the minced garlic and cook for another 30 seconds until aromatic.
  2. Add the rice and liquids: Add the uncooked rice, cream of chicken soup, and chicken broth to the skillet. Stir to combine. Use 2 cups of chicken broth initially and add more if necessary to ensure the rice fully cooks.
  3. Cook the rice: Bring the mixture to a boil, then reduce heat to medium-low, cover, and cook for about 15 minutes, stirring occasionally. Check if the rice is cooked through and adjust seasoning as needed.
  4. Finish with broccoli and cheese: Stir in the broccoli florets and half of the cheddar cheese. Continue cooking for 2 more minutes until the broccoli softens slightly. Sprinkle the remaining cheese over the top, then place the skillet under the broiler for a couple of minutes until the cheese melts and begins to brown.
  5. Garnish and serve: Remove the skillet from the oven. Garnish with fresh chopped parsley and serve hot.
