Ingredients
Scale
Cookie Dough
- 1 cup (2 sticks) unsalted butter (softened)
- 1/4 cup confectioners’ sugar (powdered sugar)
- 1/4 cup granulated sugar
- 2 teaspoons pure vanilla extract
- 2 1/2 cups all-purpose flour
- 1 cup semi-sweet mini morsels (optional)
For Rolling
- 1/2 cup additional confectioners’ sugar
Instructions
- Preheat Oven: Preheat your oven to 350 F to prepare for baking the cookies.
- Mix Ingredients: In a large bowl, use an electric mixer to beat together the softened butter, 1/4 cup confectioners’ sugar, granulated sugar, and vanilla extract until creamy, about 2 minutes. Then gradually add the flour in three batches, mixing thoroughly each time until fully incorporated. If desired, stir in the semi-sweet mini morsels.
- Shape Cookies: Roll the dough into rounded 1-inch balls using tablespoons of dough. Place the balls about 2 inches apart on ungreased baking sheets.
- Bake: Bake the cookies in the preheated oven for 14 minutes until they are lightly browned and still retain their ball shape without spreading.
- Cool: Let the cookies cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.
- Coat with Sugar: Pour about 1/2 cup of additional confectioners’ sugar into a shallow bowl. Roll each cooled cookie in the sugar, tapping off excess, and place back on the cooling rack. Let the cookies sit for one hour, then roll them in confectioners’ sugar once more for a classic snowball finish.
- Store: Store the cookies in an airtight container at room temperature for up to 5 days to keep them fresh.
Notes
- For a nut-free version, omit any nuts or nut extracts and use mini morsels optional.
- Using softened butter is key to achieving the creamy texture for dough.
- Roll cookies while warm in confectioners’ sugar for best coating adhesion.
- These cookies are soft and delicate; handle gently to avoid breakage.
- Store in an airtight container to maintain freshness and softness.
- For a more festive look, add a little cinnamon to the rolling sugar if desired.
