Description

Mediterranean Quesadillas feature flour tortillas filled with a delicious blend of feta and mozzarella cheeses, fresh spinach, diced tomato, and red onion. This quick and wholesome recipe is perfect for a nutritious weekend lunch or a busy weeknight dinner, ready in just 15 minutes.

Ingredients

Scale

Filling

  • 1 diced tomato (grape/cherry tomatoes work best for a sweeter taste, or plum tomatoes)
  • 1/3 cup diced red onion
  • 1 cup chopped spinach
  • 1/2 cup feta cheese
  • 1 cup shredded mozzarella cheese

Other

  • 3 burrito style tortillas
  • 1 tablespoon cooking oil (for frying)

Instructions

  1. Prepare the filling: In a bowl, combine the diced tomato, diced red onion, chopped spinach, feta cheese, and shredded mozzarella cheese. Mix well to evenly distribute the ingredients.
  2. Assemble the quesadillas: Lay each burrito style tortilla flat on a clean surface. Spoon about one third of the filling onto one half of each tortilla. Fold the tortilla over to cover the filling, creating a half-moon shape.
  3. Cook the quesadillas: Heat a small amount of oil in a large flat pan or on a griddle over medium heat. Place one quesadilla at a time into the pan and cook for 3 to 4 minutes on each side. Press down gently with a spatula to ensure even browning and melting of the cheese. The quesadilla should be lightly browned on both sides and cheese fully melted inside.
  4. Serve: Remove the cooked quesadilla from the pan and cut it into 4 slices. Serve warm with your choice of toppings such as sour cream, salsa, or pico de gallo for extra flavor.

Notes

  • Use flour tortillas for the best texture and pliability when folding and cooking.
  • Grape or cherry tomatoes provide a sweeter flavor but plum tomatoes are a good alternative.
  • Pressing the quesadilla while cooking helps melt the cheese evenly and crisps the tortilla nicely.
  • Feel free to add other Mediterranean ingredients like olives or roasted red peppers for variety.
  • This recipe takes only 15 minutes to prepare, making it perfect for quick meals.
