Chicken and Marinade

Instructions

  1. Prepare the marinade: In a small bowl or measuring cup, combine avocado oil, honey, tamari, minced garlic, apple cider vinegar, paprika, and onion powder. Whisk thoroughly to blend all ingredients together.
  2. Marinate the chicken: Place chicken thighs in a bowl or a Ziploc bag for easy cleanup. Pour the prepared marinade over the chicken, seal or cover, and allow to marinate while the chicken comes to room temperature, approximately 20 to 30 minutes. During this time, preheat your oven to 400°F.
  3. Arrange chicken to bake: Remove chicken thighs from the marinade, reserving the marinade for sauce. Place the chicken evenly spaced on a parchment-lined baking sheet.
  4. Bake the chicken: Roast the chicken thighs in the preheated oven for 25 minutes until cooked through and nicely caramelized.
  5. Prepare the sauce: While the chicken bakes, pour the reserved marinade into a small saucepan. Bring it to a boil, then reduce heat to simmer for 5 to 7 minutes until thickened, stirring frequently to prevent burning or sticking.
