  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon plus 1 1/2 teaspoons apple cider vinegar
  • 1 tablespoon plus 1 1/2 teaspoons olive oil, divided
  • 4 cloves garlic, minced
  • Thinly sliced scallions, for garnish (optional)


Instructions

  1. Prepare Chicken: Pat the 1 1/2 pounds of chicken pieces dry with paper towels. Season all over evenly with 3/4 teaspoon kosher salt and 1/4 teaspoon freshly ground black pepper.
  2. Make Sauce: In a small bowl, whisk together 1/4 cup honey, 2 tablespoons soy sauce or tamari, and 1 tablespoon plus 1 1/2 teaspoons apple cider vinegar until well combined.
  3. Brown First Half: Heat 1 tablespoon olive oil in a large cast-iron or stainless steel skillet over medium heat until shimmering. Add half of the chicken pieces in a single layer, cooking until the bottom is golden brown and the chicken releases easily from the pan, about 4 minutes. Flip the pieces and cook for an additional 2 minutes until golden brown. Transfer this batch to a plate.
  4. Brown Second Half: Add the remaining 1 1/2 teaspoons olive oil to the skillet and repeat the browning process with the rest of the chicken pieces. Transfer them to the plate once browned.
  5. Combine and Cook Sauce: Return all the chicken and any collected juices to the skillet. Stir in the minced garlic cloves and cook over medium heat until fragrant, about 30 seconds. Increase the heat to medium-high, then pour in the prepared sauce. Spoon the sauce over the chicken as it cooks until the chicken is fully cooked through and the sauce thickens and becomes glossy, reducing by about half, approximately 3 to 4 minutes.
  6. Garnish and Serve: Remove from heat and garnish with thinly sliced scallions if desired. Serve immediately for best flavor and texture.
