This classic Hobo Casserole is a comforting and hearty dish featuring layers of seasoned ground beef, sliced yellow potatoes, creamy soups, melted Colby Jack cheese, and topped with crispy French fried onions. Instructions

  1. Preheat Oven: Preheat your oven to 350°F to prepare for baking the casserole.
  2. Cook Ground Beef: Add the ground beef to a lightly greased 10-inch cast iron skillet, breaking it up and spreading it evenly. Season with salt and pepper to taste.
  3. Layer Potatoes: Peel and slice the yellow potatoes thinly, then layer them evenly over the cooked ground beef in the skillet.
  4. Add Cheese: Sprinkle the freshly grated Colby Jack cheese evenly over the potatoes layer.
  5. Mix Sauce: In a large bowl, whisk together the cream of chicken soup, cream of celery soup, milk, all-purpose seasoning, and Worcestershire sauce until smooth and combined.
  6. Pour Sauce: Spoon the soup mixture evenly over the cheese layer and smooth it out with the back of a spoon for even coverage.
