Egg Mixture

  • 6 eggs
  • 3 tablespoons milk
  • 3/4 cup grated cheddar cheese
  • 1/4 cup green onion, sliced
  • salt and pepper to taste

Vegetables and Ham

  • 1 cup ham, cut into small cubes
  • 3/4 cup red bell pepper, chopped
  • 1/4 cup red onion, chopped
  • 1/2 tablespoon olive oil


Instructions

  1. Preheat Oven and Prepare Pan. Preheat the oven to 350º Fahrenheit. Generously spray a mini muffin pan with cooking spray to prevent sticking.
  2. Sauté Vegetables and Ham. Heat olive oil in a skillet over medium heat. Add the ham, red bell pepper, and red onion. Sauté for about 5 minutes until the peppers and onions become slightly tender.
  3. Whisk Egg Mixture. In a separate bowl or large measuring cup, whisk together the eggs and milk until well combined. Add the sliced green onions and grated cheddar cheese to the egg mixture. For a denser texture, use a fork to blend instead of whisking.
  4. Combine Mixtures. Stir the sautéed ham and vegetable mixture into the egg and cheese mixture until evenly incorporated.
  5. Fill Muffin Pan. Pour the combined mixture evenly into the prepared mini muffin pan cups, filling each nearly full.
  6. Bake Egg Bites. Bake in the preheated oven at 350º F for 16 minutes or until the tops are golden brown and the egg bites are set.
  7. Cool and Serve. Allow to cool slightly before removing the egg bites from the pan. Serve warm for breakfast or as a tasty snack.
