Egg Mixture
- 6 eggs
- 3 tablespoons milk
- 3/4 cup grated cheddar cheese
- 1/4 cup green onion, sliced

Vegetables and Ham
- 1 cup ham, cut into small cubes
- 3/4 cup red bell pepper, chopped
- 1/4 cup red onion, chopped
- 1/2 tablespoon olive oil
Instructions
- Preheat Oven and Prepare Pan. Preheat the oven to 350º Fahrenheit. Generously spray a mini muffin pan with cooking spray to prevent sticking.
- Sauté Vegetables and Ham. Heat olive oil in a skillet over medium heat. Add the ham, red bell pepper, and red onion. Sauté for about 5 minutes until the peppers and onions become slightly tender.
- Whisk Egg Mixture. In a separate bowl or large measuring cup, whisk together the eggs and milk until well combined. Add the sliced green onions and grated cheddar cheese to the egg mixture. For a denser texture, use a fork to blend instead of whisking.
- Combine Mixtures. Stir the sautéed ham and vegetable mixture into the egg and cheese mixture until evenly incorporated.
- Fill Muffin Pan. Pour the combined mixture evenly into the prepared mini muffin pan cups, filling each nearly full.
- Bake Egg Bites. Bake in the preheated oven at 350º F for 16 minutes or until the tops are golden brown and the egg bites are set.
- Cool and Serve. Allow to cool slightly before removing the egg bites from the pan. Serve warm for breakfast or as a tasty snack.
Notes
- For a vegetarian version, omit the ham and add more vegetables or plant-based protein.
