Description

  • 3 bananas (peeled)
  • 200 g rolled oats
  • 100 g smooth peanut butter
  • 50 g runny honey
  • 1 tsp ground cinnamon

Instructions

  1. Preheat Oven: Preheat the oven to 180℃ fan/200℃/Gas Mark 6/350F to prepare for baking the cookies.
  2. Mix Ingredients: In a large bowl, mash the peeled bananas well, then add the rolled oats, smooth peanut butter, runny honey, and ground cinnamon. Mix everything thoroughly until all ingredients are evenly combined. If using chocolate chips, add half into the mixture and fold them in.
  3. Shape Cookies: Line a baking tray with parchment paper. Scoop the cookie batter into 8 equal portions on the tray, shaping each into a cookie. Press the remaining chocolate chips on top of each cookie if using.
  4. Bake Cookies: Place the baking tray in the preheated oven and bake for 20 minutes until the cookies are golden and set.
  5. Cool and Serve: After baking, allow the cookies to cool completely on the tray to let them firm up before moving or serving.

  • These breakfast cookies are naturally gluten-free as they use rolled oats and no wheat flour.
  • You can substitute runny honey with maple syrup or agave nectar for a vegan option, although honey is not vegan.
