  • 2 large ripe peaches
  • 2 tablespoons extra virgin olive oil
  • Store bought or homemade vanilla ice cream, 4 scoops
  • Store bought or homemade caramel sauce, 4 tablespoons
  • Fresh mint, roughly minced, 1 tablespoon
  • Roasted pistachios, roughly chopped, 2 tablespoons
  • Finishing salt, a pinch

Instructions

  1. Halve and pit the peaches: Cut along the seam of each peach from stem to end, then twist the halves apart. If the pit remains stuck, carefully cut around it with a sharp knife and remove it with a spoon.
  2. Preheat the grill: Heat a grill or grill pan over medium-high heat. While heating, lightly brush the top of each peach half with extra virgin olive oil.
  3. Grill the peaches: Place the peach halves face down on the grill and cook for 4 to 5 minutes until grill marks form and the peaches soften slightly. Flip and grill for another 3 to 4 minutes. Remove from heat.
  4. Assemble and serve: Once the peaches are cool enough to handle but still warm, plate them. Top each half with a scoop of vanilla ice cream, drizzle with caramel sauce, then sprinkle with chopped pistachios, fresh mint, and a pinch of finishing salt. Serve immediately for the best taste.

  • Freestone peaches are preferred for ease of pitting, but clingstone peaches work as well.
