Description

Deliciously tender and flavorful Crock Pot baby back ribs cooked low and slow for fall-off-the-bone perfection. Finished under the broiler with a tangy barbecue sauce for a mouthwatering char.

Ingredients

Units Scale

Ribs and Rub

  • 2 racks baby back ribs (about 3 to 4 pounds)
  • 2 to 3 tablespoons rib rub (or homemade rib rub, see notes)

Aromatics and Liquid

  • 1 onion, sliced
  • 4 cloves garlic, sliced
  • 1/2 cup water

Sauce

  • 1/4 cup ketchup
  • 1/2 cup chili sauce
  • 1/2 cup barbecue sauce (your choice)

Instructions

  1. Prepare the Ribs: Remove the silver membrane from the back of the ribs to ensure tenderness. Rub both the front and back of the ribs thoroughly with the rib rub or your homemade spice mixture.
  2. Load the Slow Cooker: Place the sliced onion, sliced garlic, and water in the bottom of the crock pot. Lay the ribs on top, coil if necessary to fit.
  3. Cook the Ribs: Cover and cook on high for 4 hours or on low for 8 hours until the ribs are fork tender and easily pull apart.
  4. Prepare the Sauce: While the ribs finish cooking, preheat your broiler. In a bowl, combine the ketchup, chili sauce, and barbecue sauce and mix well.
  5. Broil for Finish: Remove ribs from the slow cooker and place on a foil-lined baking sheet. Brush them generously with the sauce mixture. Broil for 3 to 5 minutes until the sauce caramelizes and the edges are slightly charred.
  6. Serve: Let the ribs rest for a few minutes after broiling, then slice and serve your tender, flavorful Crock Pot ribs hot with your favorite sides.

Notes

  • Removing the silver skin membrane from the ribs is crucial for tenderness.
  • Homemade rib rub can include brown sugar, paprika, garlic powder, onion powder, chili powder, salt and pepper.
  • Broiling or grilling the ribs after slow cooking adds a delicious smoky char and caramelizes the sauce perfectly.
  • These ribs are perfect for easy weeknight dinners or casual weekend meals.
  • You can use any variety of barbecue sauce based on your preference, from sweet to spicy.
