Potatoes

Instructions
- Prepare potatoes: Add the russet potatoes to the air fryer basket. Spray them with cooking spray and season generously with salt and pepper on all sides to ensure a flavorful crust.
- Air fry potatoes: Cook the potatoes in the air fryer at 400 degrees Fahrenheit for 30 minutes. Using an oven mitt, carefully flip the potatoes over to ensure even cooking, then air fry for another 15 minutes or until they are tender when pierced with a fork.
- Cook bacon: While the potatoes cook, heat a skillet over medium-high heat. Fry the turkey bacon slices for 5 to 10 minutes, flipping occasionally, until fully cooked and crisp. Remove from heat, let cool slightly, then chop into bite-sized pieces.
- Prepare toppings: Grate the cheddar cheese and slice the green onions. Set these aside until the potatoes are ready.
- Assemble potatoes: Remove the potatoes from the air fryer. Slice each potato down the center lengthwise, taking care not to cut all the way through. Add butter and season again with salt and pepper to taste.
- Add toppings and serve: Top each potato with grated cheddar cheese, chopped turkey bacon, and sliced green onions. Serve each fully loaded potato with a dollop of sour cream on the side for dipping or spreading, and enjoy immediately.
Notes
- This recipe is very adaptable—you can swap turkey bacon for regular bacon or a vegetarian bacon alternative.
- To make it spicier, add a sprinkle of chili powder or jalapeño slices along with the toppings.
- If you don’t have an air fryer, you can bake the potatoes in a conventional oven at 425 degrees Fahrenheit for approximately 60 minutes or until tender.
