Scale
Potatoes and Seasoning
- 1 lb. (3 to 4) russet potatoes (leave skin on)
- 2 Tbsp. olive oil
- 1 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 1 teaspoon kosher salt
- 1/2 teaspoon cracked black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon ground paprika
Garnish and Serving
- Chopped fresh chives (for garnish)
- Ranch dressing or bleu cheese dressing (for dipping)
- Sriracha ketchup or regular ketchup (for dipping)
Instructions
- Preheat Oven: Preheat your oven to 425 degrees Fahrenheit. Line a large baking sheet with parchment paper and set it aside to prepare for baking.
- Prepare Potatoes: Rinse the russet potatoes and pat them dry thoroughly. Cut the potatoes into wedges and place them in a large mixing bowl. Drizzle the olive oil over the wedges and toss well to coat all pieces evenly.
- Mix Seasoning: In a small bowl, whisk together the grated Parmesan cheese, Italian seasoning, kosher salt, cracked black pepper, garlic powder, and ground paprika until fully combined.
- Coat Potatoes: Sprinkle the seasoning mixture over the potato wedges in the large bowl. Toss the wedges again to ensure every piece is evenly coated with the flavorful mixture.
- Arrange on Baking Sheet: Spread the seasoned potato wedges on the prepared baking sheet in a single layer to allow for even cooking and crisping.
- Bake Potatoes: Place the baking sheet in the preheated oven and bake the potato wedges for 35 to 40 minutes, or until they are tender inside and golden brown and crispy on the outside.
- Garnish and Serve: Remove the baking sheet from the oven and sprinkle the potato wedges with freshly chopped chives if desired. Transfer to a serving platter and serve warm with your favorite dipping sauces such as ranch dressing, bleu cheese, sriracha ketchup, or regular ketchup.
- Enjoy: Serve immediately and enjoy the crispy, flavorful potato wedges as a delightful snack or side dish.
Notes
- For extra crispiness, soak the cut potato wedges in cold water for 30 minutes before drying and seasoning to remove excess starch.
- Using parchment paper on the baking sheet prevents sticking and makes cleanup easier.
- Feel free to substitute Parmesan with Pecorino Romano or a vegan cheese alternative for a different flavor.
- Adjust the seasoning to taste, adding more garlic powder or paprika for extra kick.
- Make sure the potato wedges are spread in a single layer without overcrowding to ensure even baking and crispiness.
