  • 4 garlic cloves (minced)
  • ¼ cup finely chopped yellow onion
  • ½ cup sun-dried tomatoes (thinly sliced)
  • 2 cups baby spinach
  • 1 ½ cups heavy cream
  • ¼ cup freshly grated parmesan cheese


Instructions

  1. Prep the chicken: Season both sides of each chicken breast evenly with Italian seasoning, kosher salt, and freshly ground black pepper.
  2. Sear the chicken: Heat 2 tablespoons of extra virgin olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 3 to 4 minutes on each side until golden brown. Remove the chicken from the skillet and set aside on a plate.
  3. Cook the onions: In the same skillet, add the remaining 1 tablespoon of olive oil and the finely chopped onion. Sauté for 2 to 3 minutes until the onions have softened and become translucent.
  4. Sauté garlic and sun-dried tomatoes: Add the minced garlic and thinly sliced sun-dried tomatoes to the skillet. Cook for another 1 minute until fragrant.
  5. Add spinach: Stir in the baby spinach and sauté for about 1 minute until it just starts to wilt.
  6. Add cream and parmesan: Pour in the heavy cream and sprinkle the grated parmesan cheese. Stir well to combine and bring the sauce to a gentle simmer.
  7. Simmer with chicken: Return the seared chicken breasts to the skillet, spooning some sauce over them. Let everything cook together for about 5 minutes until the chicken is heated through and the sauce thickens slightly.
