  • 2 large chicken breasts
  • Salt & pepper to taste
  • 1 tablespoon olive oil
  • 1 tablespoon butter

Sauce

  • 1/2 cup pesto (store-bought or homemade)
  • 1 cup heavy cream


Instructions

  1. Prepare the Chicken: Cut the chicken breasts in half lengthwise to create 4 thin cutlets. Season lightly with salt and pepper, keeping in mind that pesto can be salty, so you may want to add salt at the end.
  2. Sear the Chicken: Heat olive oil and butter in a skillet over medium-high heat. Once hot, add chicken cutlets and cook for 4 to 5 minutes on each side until golden brown. Transfer the cooked chicken to a plate.
  3. Make the Sauce: Reduce the heat to medium. Add the pesto and heavy cream to the skillet and stir to combine into a creamy sauce.
  4. Simmer Chicken in Sauce: Return the chicken along with any juices on the plate back to the skillet. Simmer for about 5 minutes or until the chicken is cooked through (internal temperature of 165°F) and the sauce thickens. If the sauce reduces too much before the chicken is done, add a splash of water, white wine, or low sodium chicken broth to loosen it.
