- 1/2 cup butter (1 stick)
- 2 cups sugar
- 1/4 cup cocoa powder
- 1/2 cup milk
- 3 cups oats
- 1/2 cup peanut butter
- 1 tsp vanilla extract
Instructions
- Prepare dry ingredients. In a medium-sized bowl, combine the oats, peanut butter, and vanilla extract. Mix well and set aside.
- Cook sugar mixture. In a saucepan over medium heat, stir together butter, sugar, cocoa powder, and milk. Bring the mixture to a rolling boil and then reduce heat to low. Maintain a low rolling boil for 3 minutes, stirring occasionally to prevent burning.
- Combine and mix quickly. Remove the saucepan from heat and immediately add the oats, peanut butter, and vanilla mixture. Stir quickly and thoroughly to combine all ingredients evenly.
- Form cookies. Drop spoonfuls of the mixture onto wax paper or parchment paper, spacing them apart to prevent sticking.
- Let cookies set. Allow the cookies to cool and set at room temperature for about 20-30 minutes until firm before serving.
Notes
- Use quick oats for a softer texture or old-fashioned oats for a chewier bite.
- Substitute peanut butter with almond or cashew butter if preferred.
- Store cookies in an airtight container at room temperature for up to 5 days.
