Instructions

  1. Prepare dry ingredients. In a medium-sized bowl, combine the oats, peanut butter, and vanilla extract. Mix well and set aside.
  2. Cook sugar mixture. In a saucepan over medium heat, stir together butter, sugar, cocoa powder, and milk. Bring the mixture to a rolling boil and then reduce heat to low. Maintain a low rolling boil for 3 minutes, stirring occasionally to prevent burning.
  3. Combine and mix quickly. Remove the saucepan from heat and immediately add the oats, peanut butter, and vanilla mixture. Stir quickly and thoroughly to combine all ingredients evenly.
  4. Form cookies. Drop spoonfuls of the mixture onto wax paper or parchment paper, spacing them apart to prevent sticking.
  5. Let cookies set. Allow the cookies to cool and set at room temperature for about 20-30 minutes until firm before serving.

  • Use quick oats for a softer texture or old-fashioned oats for a chewier bite.
