Description

This One-Pot Beef and Cheddar Ranch Pasta is a creamy, cheesy, and savory dish made with ground beef, ranch seasoning, and cheddar cheese all cooked together with pasta in a single pot for an easy weeknight dinner.

Ingredients

Scale

Ground Beef Mixture

  • 1 lb ground beef
  • 1 small onion, diced
  • 1 tbsp olive oil
  • Salt and pepper, to taste

Other Ingredients

  • 2 cups beef broth
  • 1 cup milk
  • 8 oz pasta (rotini or penne)
  • 1 packet ranch seasoning mix (1 oz)
  • 2 cups shredded cheddar cheese

Instructions

  1. Prepare Ground Beef Mixture: Heat olive oil in a large pot over medium heat. Add ground beef and diced onion. Cook until the beef is browned and the onion has softened, about 5-7 minutes. Drain any excess fat and season with salt and pepper to taste.
  2. Cook Pasta: Stir in beef broth, milk, ranch seasoning mix, and pasta to the pot. Bring the mixture to a boil, then reduce heat to a simmer. Cover and cook for 12 minutes, stirring occasionally, until the pasta is tender and has absorbed most of the liquid.
  3. Finish Dish: Remove the pot from heat. Stir in shredded cheddar cheese until melted and the sauce is creamy. Adjust seasoning with additional salt and pepper if needed. Serve hot for a comforting meal.

Notes

  • Garnish with chopped fresh parsley or green onions for added flavor and color.
  • Substitute ground turkey or chicken for a lighter protein option.
  • Adjust the amount of cheddar cheese to your preference for cheesiness.
  • Use whole milk to achieve a creamier sauce; low-fat milk can be used but may result in a thinner sauce.
  • Stir the pasta occasionally while cooking to prevent sticking to the bottom of the pot.
