Description

This refreshing blackberry sorbet is a vibrant, sweet, and smooth frozen treat bursting with fresh berry flavor. Made with simple ingredients like blackberries, sugar, water, and lime juice, it's perfect for a light dessert that’s easy to prepare and naturally gluten-free.

  • 2/3 cup sugar
  • 2/3 cup water

Fruit Mixture

  • 1 lb blackberries
  • 1 1/2 tbsp lime juice


Instructions

  1. Make the sugar syrup: Place the sugar and water in a small saucepan over medium heat. Stir occasionally until the sugar dissolves completely. Do not bring to a boil. Remove from heat and let it cool to room temperature.
  2. Prepare the blackberries: Wash the blackberries thoroughly. Place them into a blender or food processor and blend until the fruit is broken up completely.
  3. Strain the puree: Press the blended blackberry mixture through a fine strainer to remove seeds and solids, extracting as much pulp as possible. Discard the seeds and solids.
  4. Combine ingredients: Add the strained blackberry puree to the cooled sugar syrup. Pour in the lime juice and stir well to combine. Chill the mixture in the refrigerator for at least one hour or preferably overnight.
  5. Churn the sorbet: Following your ice cream maker’s instructions, pour the chilled blackberry mixture into the machine and churn until it reaches a soft-scoop consistency, approximately 20 minutes.
  6. Freeze until firm: Transfer the sorbet to a container and freeze for at least 2 to 3 hours to firm up further for longer storage.
  7. Serve: Before serving, allow the sorbet to sit at room temperature for a few minutes to soften slightly for easier scooping.

Notes

  • This sorbet is naturally gluten-free and dairy-free, making it suitable for many dietary preferences.
  • If a more tart flavor is preferred, adjust the amount of lime juice accordingly.
